Area Executive Chef<br />
Chef Claudia is classically trained in French,<br />
international, and Peruvian cuisines and<br />
recently worked as a Senior Executive Chef<br />
for Sodexo-Peru. She's passionate about<br />
blending her global recipe knowledge with<br />
creative flare, making dishes from around<br />
the world accessible to her students. We sat<br />
down with Claudia to learn more about her<br />
culinary journey.<br />
What is your favorite dish to create? Peruvian<br />
Ceviche. The simplicity of the recipe makes it my favorite.<br />
But the secret is having the perfect fish broth mixed with<br />
lime and a little heat from the aji limo.<br />
